No Bake Brownie Cupcakes
Makes 2 dozen cupcakes
Ingredients
- 1 package organic brownie mix
- 2/3 cup organic milk
- 1/2 cup organic butter
- 1 cup organic peanut butter
- 1 teaspoon Fair Trade vanilla
- 3 cups organic quick-cooking oats
- 1 cup organic candy-coated chocolate pieces
Garnish
- 1 cup whipped cream
- 1/2 cup candy coated chocolate pieces
Let’s Stir Some Up!
Line muffin cups with silicone or unbleached paper muffin liners. Place muffin pans on
cookie sheet. Spray liners with cooking spray. Set aside.
- In large saucepan, combine brownie mix, milk and butter. Cook over medium heat
until mixture comes to a boil, stirring occasionally. Boil 1-2 minutes, stirring constantly.
Carefully remove from heat. - Whisk in peanut butter and vanilla until well combined. Stir in oats 1 cup at a time.
Add candy pieces and stir to blend into batter. - Spoon batter equally into each muffin cup and place in refrigerator for 2 hours before
serving. - Garnish with whipped cream and candy pieces.
